Choriatiki- Country Salad
This is, ingredient by ingredient, the same salad I loved so much that they served in Austria at the university cafeteria. I think I ate it every day. Completely delicious! I was chuffed to see it appear in a recipe (although it’s so simple, you don’t really need one.)
Choriatiki, country salad
- 2 firm tomatoes, sliced
- 2 small cucumbers, sliced
- 1 green pepper, sliced
- 1 small onion, peeled and finely chopped
- 3 1/2 oz feta cheese, cubed
- 4 Tbsp olive oil
- Pinch of salt
- 1 Tbsp white wine winegar
- 1 tsp dried oregano
- 6 black olives
- Place the tomatoes, cucumbers, pepper, onion, and feta in a bowl and mix together.
- In a separate bwl, mix together the olice oil, vinegar, and oregano. Pour this mixture over the vegetables and garnish with the olives.
