Choriatiki- Country Salad

This is, ingredient by ingredient, the same salad I loved so much that they served in Austria at the university cafeteria. I think I ate it every day. Completely delicious! I was chuffed to see it appear in a recipe (although it’s so simple, you don’t really need one.)

Choriatiki, country salad

2 firm tomatoes, sliced
2 small cucumbers, sliced
1 green pepper, sliced
1 small onion, peeled and finely chopped
3 1/2 oz feta cheese, cubed
4 Tbsp olive oil
Pinch of salt
1 Tbsp white wine winegar
1 tsp dried oregano
6 black olives

Place the tomatoes, cucumbers, pepper, onion, and feta in a bowl and mix together.
In a separate bwl, mix together the olice oil, vinegar, and oregano. Pour this mixture over the vegetables and garnish with the olives.
